How to: Ostara Crustless Quiche Recipe

Happy Ostara! Eggs and Ostara go together, so instead of boiling, why not try an egg pie? In this example, I used goat cheese and caramelized onions.
Ingredients
3 oz shredded or chunked cheese of your choice
6 large eggs (3 whites only, whole for the cholesterol conscious)
1/2 cup plain Greek yogurt
1 teaspoon kosher salt
1/4 teaspoon ground pepper
Optional add-ins
caramelized onions
broccoli and cheddar
sundried tomatoes, spinach, goat cheese
steak and gruyere
whatever sounds yummy
Preheat oven to 400ºF.
Whisk together eggs, yogurt, salt, black pepper.
Grease a pie pan or square casserole dish and pour in egg mixture.
Top with (as in this example) or fold in cheese and any other additions.
Bake 30-35 minutes—until puffy and a knife inserted in center comes out clean.
