How To: Cinnamon Tea
Perfect for the season, this one’s so easy, it’s almost silly to post it—but it is my favorite evening beverage, cinnamon tea. It has a rich, sweet cinnamon flavor that’s the perfect after-dinner drink. The trick to the best flavor is in steeping for a long time.
Gather supplies—You’ll need
Teapot or tetsubin
Wire strainer or submersible tea infuser
4 C water
1/4 C cinnamon pieces
1 t rooibos tea
Boil water and add cinnamon and rooibos to the strainer or infuser.
Pour boiling water over the filled strainer/infuser.
Allow to sit for at least 12, though I prefer a full 24-hour steep.
I was surprised how naturally sweet this tea is. I usually let it continue steeping while I drink one cup at a time

Rooibos reduces inflammation, promotes weight loss, reduces risk of cardiovascular disease and type 2 diabetes, boost the immune system, among other benefits.
Note: Cassia cinnamon contains higher amounts of coumarin vs. Ceylon cinnamon. In large doses, coumarin can cause low blood sugar, mouth sores, liver damage, and other health issues. Studies have shown that up to 2 grams of cassia cinnamon is safe per day, which means a cup in the evening is no problem.
